Blackening Spice:
β’ 1 tbsp paprika
β’ 1 tsp cayenne pepper

β’ 1 tsp dried oregano
β’ 1 tsp garlic powder
β’ 1 tsp onion powder
β’ 1/2 tsp black pepper
β’ 1/2 tsp salt
β’ 1/4 tsp white pepper
Creamy Dijon Sauce:
β’ 3 tbsp butter
β’ 2 garlic cloves, minced
β’ 240ml heavy cream
β’ 2 tbsp Dijon mustard
β’ 1 tbsp whole grain mustard
β’ 2 tbsp lemon juice
β’ 1 tsp fresh dill, chopped
β’ 1/2 tsp salt
β’ 1/4 tsp black pepper
β’ Pinch of cayenne
Garnish:
β’ Fresh dill sprigs
β’ Lemon wedges
β’ Cracked black pepper
β’ Flaky sea salt
β’ Capers (optional)

Prep:
1. Mix blackening spices
2. Pat salmon dry
3. Bring to room temperature
4. Prepare sauce ingredients
5. Heat skillet
Seasoning Salmon:
1. Brush salmon with oil
2. Coat with blackening spice
3. Press spices firmly
4. Season skin side lightly
5. Let rest 5 mins
Cooking Salmon:
1. Heat large skillet
2. Add oil and butter
3. Place salmon skin-side up
4. Cook 3-4 mins
5. Flip carefully
Finishing Salmon:
1. Cook skin-side down
2. 3-4 mins more
3. Cook to 125Β°F for medium
4. Remove to plate
5. Rest while making sauce
