Rasta Pasta with Jerk Chicken
Ingredients:
For the Jerk Chicken:
2 large boneless, skinless chicken breasts (or 4 boneless chicken thighs)
2 tablespoons jerk seasoning (store-bought or homemade)
1 tablespoon olive oil
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
For the Pasta & Sauce:
12 ounces penne pasta
1 tablespoon butter
1 tablespoon olive oil
1 small onion (finely chopped)
2 cloves garlic (minced)
1 red bell pepper (sliced)
1 yellow bell pepper (sliced)
1 cup heavy cream
½ cup chicken broth
1 teaspoon jerk seasoning (for extra flavor)
½ teaspoon smoked paprika
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
1 cup shredded Parmesan cheese
½ cup shredded mozzarella cheese
2 tablespoons fresh parsley (chopped, for garnish)
2 green onions (chopped, for garnish)
Directions:
Cook the Chicken:
Season the chicken breasts with jerk seasoning, olive oil, salt, and pepper.
Heat a skillet over medium-high heat and cook the chicken for about 5-7 minutes per side until fully cooked. Remove from the pan, let it rest for a few minutes, then slice into strips.
Boil the Pasta:
Cook the penne pasta according to package instructions. Drain and set aside.
Sauté the Vegetables:
In the same skillet, melt butter and add olive oil. Sauté the chopped onion and minced garlic for 2 minutes until fragrant.
Add the sliced bell peppers and cook for another 3-4 minutes until slightly softened.
Make the Creamy Sauce:
Pour in the heavy cream and chicken broth, stirring to combine.
Add jerk seasoning, smoked paprika, salt, and black pepper. Simmer for 2-3 minutes.
Melt the Cheese & Combine:
Stir in Parmesan and mozzarella cheese until melted and the sauce thickens.
Add the cooked pasta and toss until fully coated in the sauce.
Serve & Enjoy:
Top the pasta with sliced jerk chicken and garnish with fresh parsley and green onions.
