Chicken:
β’ 800g chicken thighs, boneless
β’ 2 tbsp ghee
β’ 1 tsp turmeric
β’ 1 tsp salt
β’ 1/2 tsp black pepper
Spinach Base:
β’ 500g fresh spinach (or 250g frozen)
β’ 1 bunch fresh cilantro
β’ 2-3 green chilies
β’ 1 tbsp ginger, grated
β’ 4 garlic cloves
Curry Base:
β’ 3 tbsp ghee
β’ 1 large onion, finely diced
β’ 2 tomatoes, chopped
β’ 1 red bell pepper, diced
β’ 4 garlic cloves, minced
β’ 2 tbsp ginger, grated
Spice Blend:
β’ 2 tsp garam masala
β’ 2 tsp ground coriander
β’ 1 tsp ground cumin
β’ 1 tsp red chili powder
β’ 1/2 tsp fenugreek leaves
β’ 1/2 tsp turmeric
β’ Salt to taste
Finishing:
β’ 120ml heavy cream
β’ 2 tbsp butter
β’ 1 tsp garam masala
β’ Fresh cilantro
β’ Red chili slices

Prep:
1. Cut chicken into 1-inch pieces
2. Wash and drain spinach
3. Blend spinach with cilantro
4. Chop all vegetables
5. Mix spice blend
Cooking Chicken:
1. Heat ghee in large pan
2. Add chicken pieces
3. Season with turmeric, salt, pepper
4. Cook until browned
5. Remove and set aside
Preparing Spinach:
1. Blend spinach, cilantro, chilies
2. Add ginger and garlic
3. Blend to smooth paste
4. Set aside
5. Don't over-blend
Curry Base:
1. In same pan, add ghee
2. SautΓ© onions until golden
3. Add garlic and ginger
4. Cook until fragrant
5. Add tomatoes and bell pepper
Building Flavors:
1. Add spice blend
2. Cook until oil separates
3. Add spinach paste
4. Simmer 5-7 minutes
5. Add chicken back
Final Touches:
1. Add heavy cream
2. Add butter
3. Simmer 5 minutes
4. Check seasoning
5. Finish with garam masala
