Aussie Coconut Chocolate Delight Squares

A special request from one of our Foodies.
A square of sponge, a dunk in chocolate, a roll in coconut – simple, nostalgic, and oh-so-Aussie. 🥥☕ Who else is treating themselves today?
Ingredients
• 120g unsalted butter, softened
• 150g caster sugar
• 2 large Pace Farm eggs
• 1 tsp vanilla extract
• 180g self-raising flour
• 120ml milk
For the coating:
• 200g icing sugar
• 30g cocoa powder
• 100ml milk
• 20g butter
• 150g desiccated coconut
METHOD
1. Preheat oven to 180°C and line a square baking tin (20cm x 20cm).
2. Beat butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each.
4. Stir in vanilla, then fold in flour and milk alternately until smooth.
5. Pour into tin and bake for 25–30 minutes, or until a skewer comes out clean.
6. Let cool completely, then cut into squares.
7. For the icing, combine icing sugar, cocoa, milk and butter in a bowl over simmering water. Stir until smooth.
8. Dip each cake square in the chocolate icing, then roll in desiccated coconut.
9. Place on a wire rack to set.
