⁣[Makes 4-5 servings] ⁣⁣
⁣⁣
Ingredients:⁣⁣
1 lb chicken breasts
2 tbsp avocado oil, extra-virgin olive oil ⁣⁣
1 yellow onion, diced ⁣⁣
2 cloves garlic, minced ⁣⁣
1 tsp ground cumin ⁣⁣
2 tsp chili powder ⁣⁣
1.5 cups divided, Keto friendly El Pato Red Chile Enchilada Sauce - 28 oz ⁣⁣@mexgrocer
4 large zucchini sliced ⁣⁣
1/4 cup shredded cheese ⁣⁣
Dash sea salt and fresh ground black pepper
⁣⁣
⁣Instructions:
Preheat oven 350ºF.
In large skillet heat the oil, add chicken breasts and cook.⁣⁣
Season with s+p then set aside.
Once cooled shred using 2 forks. ⁣
In the same pan add in onion and cook until translucent. Add garlic and spices, then return the shredded chicken to the pan.⁣⁣
Pour in 1 cup of El Pato Red Chile Enchilada Sauce until combined. ⁣⁣
On a cutting board, lay out 4-5 zucchini slices slightly overlapping each other. Add spoonful of mixture on top at one end as shown. Roll up and transfer to a baking dish. ⁣⁣Repeat. ⁣⁣
Drizzle remaining enchilada sauce on top and sprinkle with shredded cheese. ⁣⁣
Bake for 20 minutes until cheese melted. Enjoy!⁣⁣❤⁣⁣
