[Makes 4-5 servings]
Ingredients:
1 lb chicken breasts
2 tbsp avocado oil, extra-virgin olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 tsp ground cumin
2 tsp chili powder
1.5 cups divided, Keto friendly El Pato Red Chile Enchilada Sauce - 28 oz @mexgrocer
4 large zucchini sliced
1/4 cup shredded cheese
Dash sea salt and fresh ground black pepper
Instructions:
Preheat oven 350ºF.
In large skillet heat the oil, add chicken breasts and cook.
Season with s+p then set aside.
Once cooled shred using 2 forks.
In the same pan add in onion and cook until translucent. Add garlic and spices, then return the shredded chicken to the pan.
Pour in 1 cup of El Pato Red Chile Enchilada Sauce until combined.
On a cutting board, lay out 4-5 zucchini slices slightly overlapping each other. Add spoonful of mixture on top at one end as shown. Roll up and transfer to a baking dish. Repeat.
Drizzle remaining enchilada sauce on top and sprinkle with shredded cheese.
Bake for 20 minutes until cheese melted. Enjoy!❤
