Veggie Fried Rice šŸŒ±ā£

ā£Hereā€™s how to make it:ā£
ā£ā£
ā£2 tbsp neutral oil of choiceā£
ā£3 cloves garlic, mincedā£
ā£1 red onion, slicedā£
ā£2 medium carrot, choppedā£
ā£160g shelled, frozen edamame ā£
ā£2 large handfuls kale, choppedā£
ā£1 package @palmini_official hearts of palm rice or 2 cups cooked, cold riceā£
ā£2 tbsp tamariā£
ā£1 tbsp dark soy sauce ā£
ā£1/2 tsp toasted sesame oilā£
ā£1 tsp maple syrup ā£
ā£salt and pepper, to taste ā£
ā£2 spring onions, slicedā£
ā£sesame seedsā£
ā£avocado, sliced ā£
ā£ā£
ā£In a wok or frying pan, over medium-high, heat oil and add garlic and onion. Cook for a few minutes and then add carrot. Season with salt and pepper. Cook until veggies have a bit of colour. ā£

ā£Add edamame and cook for a few minutes. Stir in kale and cook until it begins to wilt and then add @palmini_official rice. ā£
ā£ā£
ā£Add tamari, dark soy sauce, sesame oil and maple syrup. Stir and continue to cook. On medium heat. ā£
ā£ā£
ā£Adjust seasoning according to personal preference. Divide in two bowl, garnish with sesame seeds & sliced spring onion. I served mine with a few slices of avocado. Enjoy!ā£
