10 minute sweet & spicy chickpea loaded naans 🌱 here’s a recipe for a seriously quick & tasty lunch or weeknight dins! Recipe below (serves 2):
Ingredients:
2 vegan naan breads (I love @clayovenbakery)
1 tin (400g) chickpeas
Half red onion sliced
1 tsp garam masala
2 tsp mango chutney
1 tsp garlic powder (½ for chickpeas, ½ for mayo)
2 tbsp vegan mayo
1 lime
Flaked almonds (ideally but I only had ground), chilli flakes & coriander for topping
Method:
1. Heat a pan with a drizzle of oil, add drained chickpeas, garam masala, garlic powder & mango chutney and cook for 4-5 mins
2. Meanwhile, dampen your naans lightly with water & put under the grill for a few mins
3. Combine your mayo with garlic powder & a squeeze of lime
4. Layer naans with the garlic mayo, chickpeas, red onion, almonds, sprinkle of chilli flakes, coriander & more lime
