Vegan Hoisin Tofu Udon Noodles

3 servings
Ingredients:
400g udon noodles, cook and drain
150g firm tofu, cut into cubes
70g mushrooms, sliced
90g baby bok choy
2 cloves garlic,minced
1 shallots, chopped
1 tsp ginger, finely chopped
1/2 cup water
1/4 tsp white pepper
Sauce ingredients:
1 tbsp soy sauce
1 tbsp sesame oil
1/4 tsp or more dark soy sauce for colouration
1 tbsp sriracha
2 tbsp vegetarian hoisin sauce
1/2 tbsp mirin
Cornstarch slurry:
1 tbsp cornstarch
2 tbsp water
Mix the cornstarch and water. Whisk until they’re completely combined.
Method:
1.) Heat oil pan fried the tofu till golden brown and set aside.
2.) In the same wok, heat oil and sauté garlic and onion till fragrant. Add the mushrooms, bok choy and tofu. Stir fry for 1-2 minutes.
3.) Then add in the sauce mixture, udon noodles and water. Toss everything together well combine with the sauce.
4.) Lastly add in white pepper and cornstarch slurry. Stir fry until the noodles are heated through. Serve immediately and enjoy.
