ā£3 tbsp tamariā£
ā£1 tbsp sesame oilā£
ā£1 tbsp maple syrup ā£
ā£1/2 lime juiced ā£
ā£1 tbsp coconut milkā£
ā£2 tbsp water, more if neededā£
ā£1 cloves garlic, mincedā£
ā£1/2 tsp grated gingerā£
ā£1 tbsp sriracha, optionalā£
ā£ā£
ā£the salad:ā£
ā£100g soba noodlesā£
ā£170g edamame, frozen & shelled ā£
ā£1 small carrot, julienned ā£
ā£80g red cabbage, shredded ā£
ā£2 mini cucumbers, slicedā£
ā£4 radishes, slicedā£
ā£2 spring onions, sliced ā£
ā£2-4 tbsp toasted & crushed peanutsā£
ā£cilantro, freshā£
ā£lime wedgesā£
ā£ā£
ā£In a small bowl, combine all sauce ingredients, adding more water (a little at a time), if necessary. Set aside. ā£

ā£Cook soba noodles according to package instructions. Run noodles under cold water to stop the cooking and drain. Set aside. ā£

ā£In a large bowl, toss together fresh veggies, soba noodles and sauce. ā£
ā£ā£
ā£Top with fresh cilantro, crushed peanuts and a lime wedge. Enjoy!ā£
