Tropical Sweet Chili Shrimp Bowl with Mango Salsa

    mango salsa🥭
    -1/2 cup diced mango
    -1 tbsp diced red onion
    -1/2 tbsp jalapeño
    -1/2 tbsp chopped cilantro
    -juice from 1/2 lime
    -chile lime seasoning (could sub tajin)
    Sweet chili shrimp🍤
    -thaw 280g Trader Joe’s Argentinian red shrimp and pat dry (about 15 shrimp)
    -season with “Citrusy Garlic” seasoning and black pepper
    -cook in a skillet on medium heat in light avocado oil spray for 2 mins on each side
    -turn off heat and stir in 1 tbsp Trader Joe’s sweet chili sauce
    Cilantro lime rice🍋‍🟩
    -cook 1/2 cup white rice
    -stir in 1/2 tbsp chopped cilantro and the juice from 1/2 a lime (about 1 tbsp)
    -add salt to taste
    Avocado crema🥑
    -combine 40g avocado (1/2 a mini avocado), cilantro, 2 small garlic cloves, 1 tbsp Siggis plain simple ingredient Skyr, juice from 1/2 a lime, salt & pepper
    Cucumbers🥒
    -peel 1 mini cucumber and pat dry. Mix with 1 tsp rice vinegar & sesame seeds
    Assemble:
    -add cilantro lime rice (1/2 cup), sweet chili shrimp, 1/2 cup shredded lettuce, mango salsa, 1 mini peeled cucumber, & avocado crema to a bowl. Top shrimp with 1/2 tbsp additional sweet chili sauce and enjoy! Whole recipe is one serving🌿
