Ingredients:ā €
Marinated Tofu:ā €
1 block (400g) extra firm tofu, pressed and cubedā €
1/2 cup yogurt or full-fat coconut milkā €
1 tsp each: ground coriander, cumin, garam masala, turmeric, paprikaā €
1/2 tsp sea saltā €

Instructions:ā €
Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.ā €

Ingredients:ā €
1 large onion, diced (250g)ā €
5 cloves garlic, mincedā €
2 tbsp ginger, mincedā €
1/2 tsp cinnamonā €
1/2 tsp corianderā €
1 tsp garam masalaā €
2 tsp curry powderā €
1 tsp red chili flakesā €
1/2 tsp sea saltā €
2 large ripe tomatoes, pureed (400g)ā €
1 cup full-fat coconut milkā €
3-4 cups chopped veggies -- I used zucchiniā €
1 tsp maple syrupā €
ā €
In a large pot, sautƩ the onion, garlic, and ginger with oil/water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender, about 8 min, stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm. Enjoy!
