SERVES 2-3

INGREDIENTS
2 cups white rice (cooked)
1 box kidney beans (drained & rinsed)
1 green plantain
1 tbsp oil
1/4 red onion , diced
Bunch cilantro, chopped
Fresh lime juice
1 tsp ancho chili powder
2 small (or 1 large avocados 🥑)
Salt & pepper to taste

Peel the plantain and slice into thin rounds.
In a frying pan, Heat the oil on medium-high flame. Add the plantains and cook for 3-4 minutes on each side until golden.
Prepare the rice according to the package instructions, ( or heat up leftover rice) . Add the rice and all of the ingredients to a bowl and enjoy.
