Tarragon Chicken & Mushroom Orzo
Little adaptation from a stunning recipe I found in @the_slimming_foodie Easy Meals Every Day - I’m all about the easy especially on a work day! Aren’t you?

RECIPE - Serves 4 1.5 per portion
1 large onion, chopped
3 skinless chicken breasts, cut into small bite-sized pieces
200g chestnut mushrooms, sliced
100g wild mushrooms
50ml white wine (2.5 syns - don’t miss this to save #syns it’s totally worth it!)
300g orzo
1000ml hot chicken stock (plus half a white wine one)
2 teaspoons Dijon mustard (1)
Large bag of spinach
chopped tarragon leaves
50g low fat soft cheese (2)
Fry the onion for a few minutes, add the chicken and mushrooms and stir-fry for about 8-10 minutes.
Add the white wine, bring to the boil and simmer for 1 minute, then stir through the orzo. Pour in three-quarters of the chicken stock, add the mustard,
Half wine stock pot and simmer for 15 minutes, stirring occasionally.
Now add the spinach and pour in the remaining stock, stir theough and simmer for another 5 minutes.
Add the tarragon and soft cheese and stir through
