INGREDIENTS:

For the Base:

1 cup rolled oats (or almond flour for a gluten-free option)
1 cup raw almonds
1 cup Medjool dates, pitted
1/4 cup coconut oil, melted
1/4 teaspoon sea salt

FOR THE FILLING:

2 cups cashews, soaked overnight and drained
1 cup coconut cream
2 cups fresh blueberries (plus extra for topping)
1/2 cup maple syrup or agave nectar
1/4 cup lemon juice
1 teaspoon vanilla extract
Optional: 1 teaspoon natural blue food coloring or blue spirulina for color

FOR THE TOPPING:

Fresh blueberries
Optional: Edible flowers or mint leaves for garnish

INSTRUCTIONS:

PREPARE THE BASE:
In a food processor, combine rolled oats or almond flour, raw almonds, pitted Medjool dates, melted coconut oil, and sea salt. Process until the mixture is sticky and holds together when pinched.
Firmly press the mixture into the bottom of a lined springform pan to form an even layer. Refrigerate to set while preparing the filling.

MAKE THE FILLING:
In a high-powered blender, combine soaked and drained cashews, coconut cream, blueberries, maple syrup or agave nectar, lemon juice, and vanilla extract. Blend until completely smooth and creamy. Add blue food coloring or spirulina if desired and blend again to achieve a uniform color.
Taste the filling and adjust sweetness or acidity as needed.

ASSEMBLE THE CHEESECAKE:
Pour the filling over the chilled base and smooth the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
Refrigerate the cheesecake for at least 4-6 hours, or preferably overnight, to allow it to fully set.
