🇯🇵🍜🍅 UDON IN TOMATO BROTH 🍅🍜🇯🇵 This tangy and savoury tomato broth is an excellent base for noodle soup. I made fresh udon which were thick and bouncy and chewy and so so delicious I could have eaten another 3 bowls of it 🤤🤤

For the broth, serves 1:

1 x teaspoon vegetable oil
2 x garlic cloves, crushed
1cm slice of ginger, crushed
10 x cherry tomatoes, halved
Heaped teaspoon of tomato purée
250ml water
1/2 teaspoon chicken powder
1/2 teaspoon light soy sauce
1 x teaspoon apple cider vinegar
1/2 teaspoon sugar

In a saucepan on medium high heat, fry the garlic and ginger for 2 minutes to release the aromas. Add the tomatoes and fry gently for a minute so they blister. Stir in the tomato purée, pour in the water, and add the chicken powder, light soy sauce, ACV, and sugar. Simmer on medium for 5 minutes, remove and discard the garlic and ginger, and season to taste as required 👌🏻👌🏻
