PACKED LUNCH PREP 💚
In need of some lunchbox inspo? Here’s another week’s worth of meals prepped and ready to go🤩
This week, we have a tofu, soya bean and protein noodle box - this one’s so versatile- eat it as a salad, top with boiling water to make a pot noodle or stir fry for dinner 🥗
Deets per lunchbox
🌱 150g tofu, cubed
🌱 100g protein noodles
🌱 25g grated carrots
🌱 60g edamame beans
🌱 25g red pepper, sliced
🌱 Thai peanut salad dressing (recipe below)
🌱cube and pan fry the tofu with a little soy sauce
🌱 mix all the salad ingredients together with the Thai peanut dressing
🌱 Dressing ingredients (serves 3)
🌱 1 tbspn peanut butter
🌱 1 tbspn @myvegan maple syrup
🌱 1 tbspn rice vinegar
🌱 1 tbspn tamari or soy sauce
🌱 1 lime, juiced
🌱 2 tbspn water
- mix all of the dressing ingredients together
