Spring rolls by Monowara Mohamed Bhamjee.. @monowara.b Ingredients:
1 big onion(sliced fine) 1 kg chicken fillets(cubed and washed) Salt to taste 1 Tblsp crushed garlic 1 heaped tsp red ginger masala 1-2 tsp crushed green chillies ½ tsp crushed dhania ½ tsp crushed jeero 1 tsp peri peri spice(woolies) 1 tsp aromat ½ tsp chicken spice 1 tsp Cajun spice 1 tsp black pepper 2 Tblsp lemon juice 3 Tblsp mayonnaise A dash of soya sauce 2 Tblsp chilli sauce ½ each of red, green & yellow peppers(cubed) 1 small carrot(grated) ½ cup whole corn 1 Tblsp whole jeero ½ tsp mustard seeds A sprig of curry leaves Dhania for garnish 1 cup grated cheddar cheese 1 cup grated tussers or mozzereĺla cheese ½ cup milk 2 Tblsp maizena A generous handful of spaghetti boiled & drained
Method:
Braise onion in ghee with the whole jeero. Mustard seeds & Curry leaves till the onions are transparent.. Add the chicken fillets with all the spices & braise a few minutes, then add the veggies, sauces, and lemon juice and cook on medium heat. Add very little water and cook until the chicken is done and the pot is dry. Mix the maizena with the milk and Add it to the pot & cook a few minutes till it thickens. Take it off the heat and let it cool before you add the cheeses and dhania.. Add the boiled spaghetti & mix well..
