Comment RECIPE to get the recipe link sent straight to you! These tortillas are perfection! (Vegan, gluten-free), they’re truly one of my all-time favorite recipes to make. They’re incredibly soft, delicious, and SO easy.
Enjoy them for dinner, lunch, or breakfast! I love using them for a morning wrap with eggs, avocado, and hot sauce, absolutely perfect. If you’ve got a couple sweet potatoes sitting around, you need to make these. Ingredients 1 ½ cups mashed orange sweet potatoes 1 ⅓–1 ½ cups cassava flour* 2 tbsp virgin coconut oil Pinch of salt
Directions Boil the sweet potatoes, then transfer them to an ice bath to cool. Peel and mash them in a large bowl. Add in the coconut oil and cassava flour, mixing until a soft dough forms - I like to use my hands here.
Divide the dough into 5–6 balls. Use a tortilla press or a rolling pin to flatten each one. Lightly flour your surface and roll the dough out to about 1/4 inch thick (as shown in the video). Try not to go too thin or too thick.
Heat a little coconut oil in a pan and cook each tortilla over medium-high heat for about 1 minute per side.
