Super cosy vibes tonight with a warm casserole 🥘 I had lots of leftover veggies in the fridge to use and it came out perfectly, ideal over the Christmas period
Ingredients: • 2 parsnips, peeled & chopped • 2 long pointed peppers, sliced • 1 bunch asparagus, chopped into 2–3cm pieces • 200g sprouts, halved • 2 carrots, chopped • 3 medium potatoes, chopped • 1 onion, chopped • 2 garlic cloves, minced • 1 tbsp olive oil • 1 tsp smoked paprika • 1 tsp dried thyme or rosemary • Salt & pepper • 1 tbsp tomato purée • 400ml red wine stock • 1 onion gravy pot or 1 tbsp onion gravy granules + 150ml water
I put all these ingredients in my pot and cooked until all the veggies were soft. If you want some protein with this, you can add sausages or diced beef - both would work lovely.
