INGREDIENTS ~1.5 lbs yukon gold potatoes - 1 lb lean ground beef (I used 93/7) - Extra virgin olive oil - Taco seasoning of choice
Pico De Gallo (combine all ingredients) - 1 cup fresh diced tomatoes - 1/2 cup diced red onion - 1 small jalapeño diced - (Remove seeds unless you want it spicy) - 1/2 cup chopped cilantro - Juice of 1/2 a lime - Salt to taste
Guacamole (combine all ingredients) - 2 medium sized avocados - 1/2 cup diced red onion - Juice of a lime - 1/2 cup cilantro chopped - Garlic powder to taste - Salt to taste
Note(s): Some measurements are estimated, adjust ingredients to your liking.
DIRECTIONS 1. Prepare the pico and guacamole. Place them both in the fridge until ready to serve. 2. Wash & dry the potatoes then dice them up into small cubes. Put them in a large bowl then add in olive oil and taco seasoning. Mix till well combined then place evenely on a lined baking sheet. Bake at 425°F until nice and crispy.(~30-35 minutes). Mix half way through. 3. While the potatoes are in the oven, add the ground beef to a greased large skillet over medium-high heat. Break it up then add in taco seasoning. Mix and add more if needed. I also like to add a bit of bone broth (used water in the video because I didn’t have any) for extra moisture. Cook for 8-10 minutes mixing frequently until done. 4. Remove potatoes from oven and let cool for a few minutes. 5. Assemble your bowl, enjoy! • • • • #explore #cooking
