Smoky Chickpea Melt 🌿
sourdough
vegan butter
chickpeas tossed in (salt + pepper, smoked paprika, garlic powder)
charred red pepper & aubergine spread (full recipe in my feed)
vegan applewood smoked cheddar, grated
Preheat oven to 400 and spread vegan butter on toast. Toast in the oven for a few minutes until bread is slightly crisp (5 minutes, roughly).
Remove from oven, top with a layer of red pepper spread, chickpeas and grated cheese.
Return to oven for 10 or so minutes. Once everything is golden and cheese has melted, remove from oven, allow to cool slightly.
Sprinkle with chili flakes and parsley and enjoy!
