Smoky Vegan Mac & Cheese with Coconut Bacon 🌿⁣

⁣500g pasta⁣
⁣90g cashews, soaked for a few hours⁣
⁣3 tbsp nutritional yeast⁣
⁣3 tsp apple cider vinegar⁣
⁣3/4 tsp garlic powder⁣
⁣1/2 tsp smoked paprika⁣
⁣1/2 tsp turmeric⁣
⁣1 tsp salt⁣
⁣a few drops liquid smoke⁣
⁣2 cups water (maybe a little more, if necessary)⁣
⁣fresh pepper ⁣
⁣⁣
⁣Bring a large pot of water to a boil. ⁣
⁣⁣
⁣While you wait for that to happen, add all ingredients (except for pasta) to a blender. ⁣
⁣⁣
⁣Blend until ultra smooth. Add more water (just a tbsp at a time), if needed. ⁣
⁣⁣
⁣Cook pasta in boiling, salted water until nearly al dente. ⁣
⁣⁣
⁣In a separate pot, heat sauce (stirring constantly). The sauce will thicken, so add more water if necessary. ⁣
⁣⁣
⁣Add pasta to sauce and cook for a minute or two, stirring constantly. ⁣
⁣⁣
⁣𝗧𝗛𝗘 𝗖𝗢𝗖𝗢𝗡𝗨𝗧 𝗕𝗔𝗖𝗢𝗡:⁣
⁣140g coconut flakes⁣
⁣1/4 tsp smoked paprika⁣
⁣A few drops liquid smoke⁣
⁣1 tbsp maple syrup⁣
⁣2 tbsp tamari⁣
⁣⁣
⁣In a small bowl, stir together all ingredients (except for coconut). ⁣
⁣⁣
⁣Add coconut and stir until coated. ⁣
⁣⁣
⁣Roast on a lined baking tray at 350 degrees for 10-12 minutes. Definitely keep an eye on them, because they go from perfect to burnt in no time!⁣
