Smoky Vegan Mac & Cheese with Coconut Bacon 🌿
𝗧𝗛𝗘 𝗠𝗔𝗖 & 𝗖𝗛𝗘𝗘𝗦𝗘:
500g pasta
90g cashews, soaked for a few hours
3 tbsp nutritional yeast
3 tsp apple cider vinegar
3/4 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp turmeric
1 tsp salt
a few drops liquid smoke
2 cups water (maybe a little more, if necessary)
fresh pepper
Bring a large pot of water to a boil.
While you wait for that to happen, add all ingredients (except for pasta) to a blender.
Blend until ultra smooth. Add more water (just a tbsp at a time), if needed.
Cook pasta in boiling, salted water until nearly al dente.
In a separate pot, heat sauce (stirring constantly). The sauce will thicken, so add more water if necessary.
Add pasta to sauce and cook for a minute or two, stirring constantly.
𝗧𝗛𝗘 𝗖𝗢𝗖𝗢𝗡𝗨𝗧 𝗕𝗔𝗖𝗢𝗡:
140g coconut flakes
1/4 tsp smoked paprika
A few drops liquid smoke
1 tbsp maple syrup
2 tbsp tamari
In a small bowl, stir together all ingredients (except for coconut).
Add coconut and stir until coated.
Roast on a lined baking tray at 350 degrees for 10-12 minutes. Definitely keep an eye on them, because they go from perfect to burnt in no time!
Sprinkle mac & cheese with coconut bacon. Enjoy!
