🥩 Grilled Lamb Chops with Mashed Potatoes and Vegetables
Ingredients:
For the lamb chops:
4 lamb chops
2 tbsp olive oil
2 garlic cloves (minced)
1 tsp rosemary (fresh or dried)
1 tsp thyme
Salt and black pepper to taste
1 tbsp butter
For the mashed potatoes:
4 large potatoes (peeled and chopped)
2 tbsp butter
½ cup milk
Salt and pepper to taste
For the vegetables:
1 cup broccoli florets
1 cup diced pumpkin (or carrots)
1 tbsp olive oil
Salt, pepper, and parsley to taste
Instructions:
1. Marinate the lamb: In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture over the lamb chops and let them rest for at least 30 minutes.
2. Cook the lamb: Heat a grill pan over medium-high heat. Add butter, then cook the lamb chops for about 3–4 minutes on each side, until golden brown. Let them rest for 5 minutes before serving.
3. Make the mashed potatoes: Boil potatoes until tender (about 15 minutes). Drain, then mash with butter, milk, salt, and pepper until smooth and creamy.
4. Cook the vegetables: Steam or boil the broccoli for 3–4 minutes. Roast or sauté the pumpkin cubes in olive oil with salt and pepper until soft and slightly caramelized.
5. Serve: Place mashed potatoes on the plate, top with grilled lamb chops, and add broccoli and pumpkin on the side. Garnish with chopped parsley.
