  • Soup season is upon us!

    Roasted garlic and tomato 🫶🏻

    2 portions

    500g tomatoes
    1 red pepper
    1 onion
    1 bulb garlic
    200g cottage cheese
    Salt and pepper
    Basil

    Chop and roast the veggies (I used spray oil and salt) for 20min 200degrees
    Pop the garlic out of the skins and blend
    Add 200g cottage cheese and blend again

    Serve! With basil on top
