Roasted Cauliflower Steaks & Sweet Potato Puree with Green Pesto 🪴

Serves 3
🥑 Pesto:
Blend 1 avocado, 2 handful parsley, juice of 1 lime, 1 tsp garlic powder, salt & pepper, a splash of water until smooth.
🍃 Cauliflower:
3 tbsp olive oil
1 tsp smoked paprika
1 tsp sweet paprika
1/2 tsp cumin
2 tsp mixed Italian herbs
1 tsp garlic powder
Salt & pepper
▶︎ Mix it all together. Cut 1 cauliflower head into “steaks”, brush them both sides with the mixture. Bake on tray 25 min at 180C, flip halfway through.
🥕 Puree:
▶︎ Cut 3 sweet potatoes in half lengthwise, poke holes in it with a fork, bake on parchment paper 40 min at 180C, flesh face down. In the meantime boil 2 cubed carrots. Drain the carrots. Let cool the potatoes a little and scoop out the flesh with a spoon, put them back in the pot with the carrots. Add 1 tbsp vegan margarine, a little plant milk, 2 tsp smoked paprika, 1 tsp cumin, salt & pepper, mash until smooth.
