• 250g macaroni
• 50g butter
• 2 tbsp plain flour
• 500ml whole milk
• 200g mature cheddar, grated
• 2 tbsp peri-peri sauce (adjust heat to taste)
• 1 tsp smoked paprika
• ½ tsp garlic powder
• Salt & black pepper, to taste
Cook the pasta – Boil the macaroni in salted water until al dente, then drain and set aside.
Make the cheese sauce – Melt the butter in a saucepan, stir in the flour, and cook for 1-2 minutes. Gradually add the milk, whisking until smooth.
Add the cheese & spices – Stir in the cheddar, peri-peri sauce, smoked paprika, garlic powder, salt, and pepper. Mix until smooth and gooey.
Combine – Stir the cooked pasta into the sauce, coating it well.
