LEMONGRASS TOFU
Recipe:
Ingredients:
1 block organic tofu
2 1/2 tbsp avocado oil
1 stalk lemongrass, minced
4 garlic cloves, minced
1 handful chives, roughly chopped
2 tbsp soy sauce
2 tbsp vegetarian oyster sauce
2 tsp maple syrup
1 cup brown rice
Instructions:
1. Cook brown rice according to package directions, and set aside.
2. Squeeze tofu between 2 paper towels to dry it out, then cut into cubes.
3. Heat avocado oil in a large non-stick pan on medium-high heat.
4. Add the tofu to the pan and cook on each side for 2-3 minutes, until golden
brown. Push tofu to the side of the pan.
5. Add the remaining 1/2 tbsp avocado oil to the pan. Add the lemongrass,
garlic, and chives and cook for 1-2 minutes.
6. Lower the heat to medium-low, stir the tofu and seasoning together and add
the soy sauce, oyster sauce and maple syrup to the pan.
7. Toss all together, and serve alongside rice.
