Homemade Pierogi

Ingredients:

For the Dough:
2 cups all-purpose flour, plus extra for dusting
1/2 tsp salt
1 large egg
1/2 cup sour cream
1/4 cup unsalted butter, melted
For the Filling:
2 cups mashed potatoes
1 cup shredded cheddar cheese
1/4 cup chopped green onions
Salt and pepper to taste
For Serving:
Plain with butter
Or
Sour cream
Crumbled bacon
Chopped green onions
Directions:

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the egg, sour cream, and melted butter.
Use a fork to gradually incorporate the wet ingredients into the flour until a dough forms.
Turn the dough out onto a lightly floured surface and knead until smooth, about 5 minutes. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
In the meantime, prepare the filling by combining mashed potatoes, shredded cheddar cheese, chopped green onions, salt, and pepper in a mixing bowl. Mix until well combined.
After the dough has rested, roll it out on a floured surface to about 1/8 inch thickness. Use a round cutter (about 3 inches in diameter) to cut out circles of dough.
Place a small spoonful of the potato filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape, then pinch the edges to seal.
Bring a large pot of salted water to a boil. Carefully drop the pierogi into the boiling water and cook for 3-4 minutes, or until they float to the surface.
Remove the cooked pierogi with a slotted spoon brown in butter

Serve the pierogi hot with sour cream, crumbled bacon, and chopped green onions for garnish.
