    Ingredients

    ✨½ cup (60g) self-raising flour
    ✨1 tbsp sugar (adjust to taste)
    ✨1 egg
    ✨¼ cup (60 ml) milk (add a splash more if needed)
    ✨⅓ cup (50g) blueberries (opt)
    ✨Butter or oil for cooking

    Instructions
    ✨In a bowl, whisk together the flour, baking powder, sugar, and a pinch of salt.
    ✨In a separate bowl or jug, beat the egg and milk together. Pour into the dry ingredients and stir just until combined. The batter should be thick but spoonable; add a splash more milk if it’s too thick.
    ✨Gently fold in the blueberries.
    ✨Heat a non-stick pan or skillet over medium heat and add a little butter or oil. Spoon in the batter to make 2–3 small pancakes. ✨Cook for about 2–3 minutes until bubbles appear on the surface, then flip and cook the other side until golden and cooked through.
    ✨Enjoy warm with butter, syrup, yogurt, or extra berries.
