CRIPSY PEANUT TOFU
Recipe:
Ingredients:
1 cup (120g) breadcrumbs
1 cup (120g) chickpea flour
1 tsp cumin
1 tsp paprika
1 tbsp dried thyme
10 oz (300g) extra firm tofu
1/2 cup (120g) peanut butter
1 tbsp maple syrup
2 tbsp rice vinegar
3 tbsp soy sauce
1/2 cup (120ml) plant based milk
1 tbsp sesame oil
1 large onion, diced
2 cloves garlic, minced
Instructions:
STEP 1: Preheat the oven to 350 degrees F/180 degrees C and line a large baking tray with parchment paper.
STEP 2: In a mixing bowl, whisk together the breadcrumbs, chickpea flour, cumin, paprika and dried thyme. Then, add the tofu and mix together thoroughly.
STEP 3: Arrange the tofu on the baking tray in a single layer and bake in the preheated oven for 25 minutes, until crispy.
STEP 4: Prepare the sauce by whisking together the peanut butter, maple syrup, rice vinegar, soy sauce and plant based milk.
STEP 5: Heat the sesame oil in a large skillet over a mediumhigh heat. Add the onion and garlic, and cook for 5 minutes, until softened. Next, add the sauce and the tofu,
stirring together thoroughly.
STEP 6: Serve immediately with rice or noodles of your
choice.
