Moist Buttermilk Apple Cake with Warm Cinnamon Spice

For the cake: 2 cups (250g) all-purpose flour 1 tsp baking powder ½ tsp baking soda ½ tsp salt 1 ½ tsp ground cinnamon ¼ tsp ground nutmeg ½ cup (115g) unsalted butter, softened 1 cup (200g) granulated sugar 2 large eggs 1 tsp vanilla extract 1 cup (240ml) buttermilk 2 medium apples, peeled, cored, and diced For the topping: ¼ cup (50g) brown sugar 1 tsp ground cinnamon 2 tbsp (30g) butter, melted
Directions:
Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch (20x20 cm) baking pan or line with parchment. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Beat in eggs one at a time, followed by the vanilla extract. Add the dry ingredients in three parts, alternating with the buttermilk. Start and end with dry ingredients. Mix until just combined. Fold in the diced apples gently. Pour the batter into the prepared pan and smooth the top. In a small bowl, mix the brown sugar and cinnamon. Sprinkle over the top of the batter, then drizzle with the melted butter. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean. Cool slightly before slicing and serving warm or at room temperature.
