BACON & BROCCOLI PASTA
Stage 1:
✖️ 250g short cut bacon, diced
✖️ 4 garlic cloves, finely chopped
✖️ 6 white cup mushrooms, diced
✖️ 1 broccoli, diced
✖️ 1 red onion, diced
Stage 2:
✖️ 120g baby spinach
Stage 3:
✖️ 2 eggs
✖️ ¾ cup cooking cream
✖️ ½ cup grated parmesan
Pasta:
✖️ 400g large spiral pasta
01 Cook pasta according to packet directions.
02 Heat oil in a large frypan over medium high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often. Add spinach for last 2 minutes. Stir until wilted.
03 Combine sauce ingredients in a small bowl and whisk.
04 Remove pan from heat and pour in sauce. Stir for 1-2 minutes until sauce thickens slightly.
05 Drain pasta and add to frypan. Toss to coat, season and serve.
