Zesty Coconut Satay Chicken Delight
EASY SATAY STYLE LIME & COCONUT CHICKEN:
This will take you around 30 minutes, itβs packed with flavour, creamy nutty and ideal for a quick dinner (or lunch).
SERVES 2: Difficulty βοΈ
Total Prep & Cook time: 30 Minutes.
Firstly make your satay style lime & coconut sauce. Add the following to a bowl and mix well.
π 120ml coconut milk (*full fat)
π Zest & juice of 1 lime
π 2 tbsp peanut butter (crunchy or smooth)
π 1 tbsp fish sauce
π 1 tsp light soy sauce (optional)
Donβt worry too much about making the sauce too smooth as the peanut butter will dissolve when itβs added to the wok or pan.
π Dice 2 chicken breasts
π Slice 1 green pepper
π Mince 2 garlic cloves & grate a small piece of ginger
π Chop a small handful of coriander
π₯₯ In a hot wok add 1 tbsp oil and add the chicken. Stir fry on high heat for 3-4 minutes until starting to brown and no longer pink.
πβπ© Add the garlic, ginger & pepper. Stir fry for a further 2 minutes.
π₯₯ Add the sauce, bring to a simmer and simmer on a medium heat for for 2-3 minutes.
πβπ©Remove from the heat and add the coriander. Stir through and serve immediately with steamed rice and enjoy π

* Full fat coconut milk is better but do use reduced fat if you prefer.
