Sticky Sesame Soy Chicken with Spiced Potatoes
CHINESE 5 SPICE, HONEY & SESAME CHICKEN TRAYBAKE:
Fuss free, an easy midweek meal with Asian flavours and a sticky Sesame Soy Glaze π
SERVES 2: Difficulty βοΈ
β²οΈ PREP: 20 Minutes.
Preheat oven to 200Β°C
THE CHICKEN:
In a bowl add the following and mix well. Add 2 chicken breasts and make sure they are fully coated.
π 1 tbsp sesame oil
π 1/2 tsp Chinese 5 spice
π 1 tbsp light soy sauce
π 1 tbsp honey
π 2 minced garlic cloves
π Small piece of grated ginger
THE POTATOES:
Wash 350g baby potatoes and half or quarter them depending on the size. Put them in a bowl, add the following and give them a good toss to make sure they are well coated.
π 1/2 tsp Chinese 5 spice
π 1 tsp sesame oil & 1 tsp olive oil
π Pinch of black pepper & a pinch of salt
THE SAUCE:
Add the following to a pan and heat until starting to bubble.
π 2 tbsp light soy sauce
π 1 tbsp honey
π 1 tsp rice vinegar
π 1 tsp sesame oil
Once bubbling, gradually thicken by adding a cornflour slurry. 1 tsp cornflour mixed with 1 tbsp water. Once thickened remove from the heat & add 1 tsp sesame seeds.
β²οΈ COOK: 45 Minutes.
π Tip the potatoes into a baking tray, put them in the oven for 25 minutes.
π Add the chicken to the potatoes and pour in the remaining marinade. Return to the oven for 20 minutes.
π Once cooked leave to rest for a few minutes. Reheat the sauce and drizzle over the chicken. Add finely chopped spring onions and optional coriander leaves. Serve and enjoy π
