Chop 2onions into pot
sprinkle in 1tsp whole cumin
pour in enough oil to fry onions till golden brown
add in 1kg lamb meat with 3tsp minced ginger/garlic
pour in 1/4cup water
mix cover and cook on low till meat is almost cooked and braised really well till golden.
add in spices salt chilli powder to your
taste, 2tsp dhanna/jeeru powder, 1slightly heaped tsp turmeric, 1/2tsp tandoori powder, 1tsp paprika powder, 1heap tsp Garam masala
Mix and cook for a further 5min
pour into it 1 tin tomato that has been blended to purée, 1Tbs tomato purée mix cover cook 15min or till tomatoes have gone thick glossy you see little oil surface,
Add in 3 potatoes cut into chunks
pour in 2 to 3 cups water depending on how soupy you like
let it cook till gravy gets thick & potatoes have cooked through,
chop in coriander serve with rice fried papdi and pickles....😋
Garlic Rice
Bring pot of water to boil lightly salted
add in 2 & 1/2 cups rice that’s been soaked & washed about 30min,
once rice starts boiling rapidly keep a check
as soon as you feel rice is half cooked drain out water,
Put rice back into pot, sprinkle some water over it about 3/4cups you can always check in between if it needs more, steam till cooked
In small pot melt 4Tbs solid ghee
slice in 1 onion add in 2tsp whole cumin, slice in 5 garlic cloves,
fry till onions have lightly browned,
pour over rice, give it light mix from on top using wooden spoon handle
Serve with your curry poured over, rice flour papri , pickles of your choice …😋
