Ingredients:

4 cups fresh pineapple, finely chopped (or crushed)

2 cups granulated sugar

2 tbsp lemon juice

½ cup water

Instructions:

Prepare the Pineapple:

Peel, core, and finely chop or crush the pineapple.

If you prefer a smoother jam, blend it lightly in a food processor.

Cook the Jam:

In a large saucepan, combine the pineapple, sugar, lemon juice, and water.

Heat over medium-high, stirring frequently, until the sugar dissolves.

Bring the mixture to a rolling boil.

Thicken the Jam:

Reduce heat and let it simmer for 25–30 minutes, stirring occasionally.

To test if the jam is ready, place a small spoonful on a cold plate. If it thickens and wrinkles when pushed, it’s done.

If it's too thin, simmer for a few more minutes.

Jar and Store:

Pour the hot jam into sterilized jars, leaving about ¼-inch space at the top.

Wipe the rims, seal tightly, and process in a boiling water bath for 10 minutes.

Let the jars cool completely before storing.

Storage:

Store sealed jars in a cool, dark place for up to 1 year.

Refrigerate after opening and use within 3–4 weeks.

Serving Ideas:

Spread on toast, scones, or biscuits.

Use as a topping for yogurt, pancakes, or waffles.
