Vegan Chana Masala🍛

Recipe:

Ingredients:

• 2 tbsp vegetable oil
• 1 large onion, finely chopped
• 3 garlic cloves, minced
• 1-inch ginger, grated
• 1 green chilli, finely sliced (optional for heat)
• 2 tsp ground cumin
• 2 tsp ground coriander
• 1 tsp ground turmeric
• 1 tsp garam masala
• 1 tsp paprika
• 800g canned chickpeas, drained and rinsed
• 400g canned chopped tomatoes
• 1 tsp salt
• 1/2 tsp black pepper
• 1 tbsp lemon juice
• Fresh coriander, chopped, for garnish
• Cooked basmati rice, to serve

Method:

1. Heat the oil in a large pan over medium heat. Add the onion and cook until golden.
2. Stir in the garlic, ginger, and green chilli, cooking for another minute until fragrant.
3. Add the cumin, coriander, turmeric, garam masala, and paprika. Cook for 2 minutes until the spices are well toasted.
4. Pour in the chickpeas and chopped tomatoes. Add salt and pepper, and simmer for 20 minutes until the sauce thickens.
5. Finish by stirring in the lemon juice for a bit of zing.
6. Serve the Chana Masala over fluffy basmati rice, garnished with fresh coriander.
