Vegan BBQ Jackfruit Pulled Pork
Recipe:
Ingredients
Jackfruit pulled pork
2 20-ounce cans young green jackfruit , in water or brine
1 tbsp olive oil
1 small yellow onion , thinly sliced
1 cup BBQ sauce (or store bought)
1 tsp dried oregano
1 tsp cumin
1/4-1/2 cup water
For the burgers:
8 burger buns (gluten-free optional)
1-2 cups vegan coleslaw (optional for topping or serving)
1/4 cup fresh cilantro finely chopped (for sprinkling)
Instructions
Drain and rinse the jackfruit. Set aside.
Add the olive oil and sliced onions to a medium skillet and sauté on a medium heat until softened and slightly golden, 4 minutes.
Add the jackfruit and oregano and cumin and stir together, then add the BBQ sauce and water and stir to combine. Lower the heat to a low simmer, cover the pan and leave to stew and soften, about 30 minutes.
Remove the lid and use two forks to shred the jackfruit directly in the pan. Increase the heat to medium high and cook for a couple of minutes if needed until just thick. If thick already, add a little water until just sloppy!
Serve on toasted hamburger buns with vegan coleslaw and fresh coriander.
