SIMPLE BEAN CHILLI with a surprise ingredient (dark choc 🍫) 😋
Serves 3
- 1 small onion, diced
- 3 cloves garlic, minced OR 3 tsp garlic granules
- 1 veggie stock cube (I use OXO)
- 1 & 1/2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp mild chilli powder (or depending how hot you like it)
- a pinch of cinnamon
- 1 tbsp chopped dark chocolate, for sweetness & richness, (I used 60% dark choc, OR use 1tbsp maple syrup as a substitute)
- 400g can chopped tomatoes
- 400g can red kidney beans, drained & rinsed
- 1/2 can black beans, drained & rinsed
- salt & pepper to taste
NOTE: you could even add in some sliced peppers or sweet corn if you like.
Method:
1. Sauté onion & garlic in a medium saucepan with a little oil (or a little water for oil free) for 5 mins until soft on a medium heat. (skip fresh garlic if using garlic granules)
2. Stir in all the spices including the veg stock cube, oregano & garlic granules (if using), cook for 1 min until fragrant.
3. Pour in the chopped tomatoes, then fill your tomato can 1/2 way with water, pour it in and give it all a good stir.
4. Stir in the beans & dark chocolate (or maple syrup), bring to a boil, then once it starts to bubble, turn the heat down to low and simmer for 20 mins until the liquid has reduced down. Season with salt & pepper.
4. Serve with rice, guacamole & desired veggies/salad. ENJOY 😊
