Bring the Mediterranean to your kitchen this lunchtime☀️

Recipe:

Ingredients:
- 600g cherry tomatoes, halved
- 150g Kalamata olives, pitted
- A handful of fresh basil leaves, torn
- A handful of fresh parsley, chopped
- 1 small red onion, thinly sliced
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
- 4 thick slices of sourdough bread

Method:
1. In a large bowl, combine the halved cherry tomatoes, Kalamata olives, torn basil leaves, and chopped parsley.
2. In a smaller bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and black pepper to create a dressing.
3. Pour the dressing over the tomato and olive mixture and toss gently to coat.
4. Toast the slices of sourdough bread until golden brown and crisp. Rub the toasted bread with a garlic clove for extra flavour if desired.
5. To serve, arrange the toasted bread on plates and spoon the tomato and olive salad over the top. Drizzle with any remaining dressing from the bowl.
6. Garnish with additional basil or parsley if desired and serve immediately.
