Recipe:

Ingredients:
Short noodle of choice
3 tbsp olive oil
1/2 tsp chili flakes
1 small onion diced
1 large clove garlic sliced
8 Brussels sprouts halved (airfried!)
8-10 cremini mushrooms
7ish large green olives sliced
1/2 cup cooked chickpeas
1 1/2 cups Teris walnut tofu meat
4 cups torn kale hard stem removed
1/2 cup hot pasta water
Vegan parm or nutritional yeast
Salt and cracked pepper

Directions:

Cook pasta, reserve 1 cup water. In a large deep-sided pan heat oil and chili flakes. Cook onion until translucent, add garlic and mushrooms and cook until mushrooms are golden. Add in air-fried Brussels, meat, chickpeas, olives and kale. Toss to coat. Season well with salt and cracked pepper. Add pasta, and pasta water and toss to emulsify. Add in cheese and toss again. Check for seasoning and serve immediately!!!
