280 g/10 oz ravioli with your favorite filling
1 tbsp olive oil
1 tbsp unsalted butter
2 garlic cloves, minced
1 tsp lemon juice
250 ml/1 cup cream 20% fat, or half-and-half, at room temperature
55 g/2 oz grated Parmesan
1/4 cup/50 ml white wine, or chicken broth
1 tsp each: salt + black pepper
1/4 tsp red pepper flakes
about 10 fresh sage leaves
55 g/2 oz roughly chopped walnuts
