GARLIC CHICKEN STIR FRY:
Get this on your meal plan for a mid-week quick easy chicken stir fry 👌
SERVES 2: Difficulty ⭐️
⏲️ PREP: 10 Minutes.
📌 Slice 2 chicken breast into pieces, slice 3 spring onions, slice 4 garlic cloves, add 2 tbsp cornflour to a shallow bowl and add salt & pepper and in a small bowl add and mix 1 tbsp light soy sauce, 1 1/2 tbsp Chinese cooking wine (Shaoxing) & a pinch of sugar.
⏲️ COOK: 10 Minutes.
🧄 Add the chicken pieces to the cornflour and coat them well. Shake off any excess. In a wok or frying pan add enough sunflower oil to shallow fry and once hot add the chicken. Cook for 3-4 minutes turning frequently until nicely golden brown. Remove with a slotted spoon to a plate lined with kitchen paper and wipe the wok / pan clean.
🧄 Reheat the wok / pan with 1 tbsp oil and over medium heat and add the garlic and spring onion. Stir fry until fragrant and softened 1-2 minutes. Add the sauce mix and add the chicken back in. Combine everything together making sure the chicken is well coated with the sauce. Serve and enjoy 😉
