~ pumpkin spice protein muffins ~ • it’s finally October, so here is the perfect high protein baking recipe to get into the halloween mood (and fall mood for the Americans👀). the macros of these were absolutely insane, all with just a couple ingredients (20g protein per muffin!!)🤤 i loved how fluffy they turned out too. the recipe & macros are below, enjoy xx
- 160g maple protein pancake mix @myproteinau (dc LILYC) - 60g vanilla protein powder @myproteinau - 1 tsp pumpkin spice - 2 eggs/egg whites - 3 tbsp maple syrup (i used sugar free) - 1 tsp vanilla extract - 1c pumpkin purée
- in a bowl, combine the dry ingredients before mixing in the wet. line a cupcake tray, and scoop batter into 8 muffins. bake @ 180°c (350°f) for 25-30 mins. let cool. - serve & enjoy! 🎃
