ETHIOPIAN LENTIL STEW ๐
Iโve been doing lots of batch cooking recently, including this delicious Ethiopian Lentil Stew. My friend brings me Berbere spice back directly from Addis Ababa and the flavours in this stew are absolutely amazing ๐๐ฏ๐
Ingredients (8 big portions)
2 onions, diced
6 garlic cloves, crushed
Thumb size piece of ginger, grated
1 tbspn Berbere spice
1 tspn cayenne pepper
2 tspn paprika
2 tins chopped tomatoes
2 tbspn tomato purรฉe
600g red lentils
500g sweet potato, cubed
1.5 litre veg stock
220g spinach
Salt and pepper
Method
1. Gently fry the onions in a deep bottomed pan with a little oil or spray oil until softened
2. Add the garlic and ginger, cook for a few minutes more before adding all the spices. Cook for another 3-4 minutes
3. Add the chopped tomatoes, tomato purรฉe, lentils, sweet potato and stock. Stir everything through, place a lid on top and simmer gently for 20-30 minutes until the sweet potatoes and lentils have softened
4. Season with salt and pepper then add the spinach, stirring through to combine before taking off the heat
5. Serve with rice, quinoa, flatbread or veg
6. Enjoy
Alternatively divide between 8 containers, chill and freeze for easy dinners ๐ฅฐ
