LENTIL QUINOA HERB SALAD WITH BASIL TAHINI

โ๏ธ FOR THE SALAD โคต๏ธ
๐น1ยฝ cup brown lentils, cooked
๐น1 cup quinoa, cooked
๐นยฝ cup cucumber, chopped
๐นยฝ cup celery, chopped
๐นยฝ cup green peas, steamed
๐นยฝ cup broccoli florets, finely chopped
๐นโ
cup scallions, chopped
๐น1 tbsp fresh dill, finely chopped
๐น1 tbsp fresh mint, finely chopped
๐น1 tbsp lemon juice
๐น1 tsp each garlic powder, Nigella seeds (optional) and red pepper flakes (optional)
๐น1 tsp sea salt
๐นSpring mix or chopped spinach to serve
๐๐ป Combine all the ingredients together in a large bowl and stir until well mixed. Serve chilled or at room temp on top of a base of greens. Enjoy!

cup tahini paste
๐นยผ cup water
๐น2 tbsp lemon juice
๐น1 tsp olive oil
๐น1 medium garlic clove
๐น1 tsp sea salt
๐น2 tbsp fresh basil, chopped
๐๐ป In a blender combine together all the ingredients aside from the basil and pulse till smooth and creamy. Transfer to a jar, stir in the basil and serve chilled or at room temp. Enjoy!
