Vegan Warm Wild Rice & Butternut Squash Salad โข Balsamic dressing ๐งก

Wild rice
Butternut squash
Broccoli
Red onion
Pecans
Cranberries
๐ชด ๐๐ซ๐๐ฌ๐ฌ๐ข๐ง๐ :
2 tbsp olive oil
2 tbsp balsamic vinegar
2 tsp maple syrup
2 tsp mustard
Salt & pepper
Method
Cook the rice and set aside.
Whisk the sauce ingredients together until smooth.
In a pan, sautรฉ the onion in a little oil until fragrant. Add the cubed butternut and sautรฉ for a while until lightly browned on the edges. Add in the broccoli and cook until still a little crunchy. Add in the cooked rice, pecans, sauce, salt & pepper and stir on medium heat to combine. Serve and top with dried cranberries if you wish.
