Ingredients:
- 2 cans of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 1 can chopped tomatoes
- 2 tablespoons tomato paste
- 1 cup vegetable broth
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon sugar (optional, to balance acidity)
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Method:
1. Heat olive oil in a large pan over medium heat. Add the onions and sauté until translucent.
2. Add the garlic and red bell pepper, cooking until they start to soften.
3. Stir in the ground cumin, smoked paprika, ground coriander, and cayenne pepper, and cook for another minute until fragrant.
4. Mix in the chopped tomatoes, tomato paste, and vegetable broth. Bring to a simmer.
5. Add the chickpeas to the sauce and let simmer for 15-20 minutes, or until the sauce thickens and the chickpeas are flavorful.
6. Season with salt, pepper, and a teaspoon of sugar if desired.
7. Serve hot, garnished with fresh parsley and a squeeze of lemon juice for added zest.
