Wedges.. again? 😜 mmhmm these are on high rotation because they’re just so good - golden spicy flavourful crispy on the outside and fluffy on the inside 🤤 I baked these in my oven and not an air fryer this time, ready in 30 mins and paired with a zesty avocado dip for a match made in heaven 🥑 by veganbyeden
Here’s how to make them 👇🏼
Makes 1 big or 2 smaller serves
▪️Approx 650-700g potatoes
▪️2 tbsp extra virgin olive oil
▪️1 tbsp vegan cashew parmesan
▪️1 tsp paprika
▪️1 tsp garlic powder
▪️1/2 tsp turmeric
▪️1/2 tsp chilli flakes
▪️1/2 tsp salt and black pepper
For the avocado dip:
▪️1 avocado
▪️juice of 1 lemon
▪️handful coriander
▪️pinch of salt & pepper
1️⃣ Preheat oven to 200°C
2️⃣ Wash the potatoes and dry them. Leave the skins on and slice into long thin pieces. Add them to a large bowl.
3️⃣ Add the oil and the spices. Toss together to coat the wedges.
4️⃣ Transfer to a lined baking tray, spacing them out into a single layer. Bake for 30 mins turning once halfway through.
5️⃣ Mash the avocado in a small bowl and add chopped coriander, lemon juice, salt & pepper. Serve wedges with the avo dip and enjoy 🌱
