Coconut and Roasted Bell Pepper Silken Tofu Curry served with Silken Tofu Naan! 🤤👏

​Recipe:

​CURRY
1 block (11.5oz) silken tofu
3 cups sweet potatoes
3 cups cauliflower
1 medium onion, chopped
3 cloves garlic, minced
1 tbsp ginger, grated
1 roasted red bell pepper, chopped
1 can (13.66oz) full fat coconut milk
3⁄4 cup veg broth
3 tbsp tomato paste
1 tbsp + 1 tbsp oil
Spices: 2 tsp garam masala, 1⁄2 tsp each cumin, cinnamon, turmeric and cayenne
2 tsp sea salt

METHOD
Preheat oven to 420°F & line a sheet pan with parchment paper. Toss the sweet potato and cauli in oil & bake until crispy, ~30 mins. Set aside.
In a pot heat up 1 tbsp oil, add onion, saute 2 mins then add garlic & ginger. Saute 1 min.
Add tomato paste, roasted pepper, spices & salt. Saute 3 mins, stirring to avoid burning. Add veg broth, bring everything to a simmer & cook 5 mins. Remove from heat.
Transfer pot's contents to a food processor, pulse till smooth. Return to pot, stir in coconut milk, roasted sweet potatoes & cauli and simmer 5 mins. Remove from heat.
Plate the curry first, add sliced silken tofu, making sure the bottom of the tofu slices are submerged in curry.

​SILKEN TOFU NAAN
6 oz soft tofu (refrigerate remaining tofu)
3 1⁄2 cups all purpose flour + more for dusting
3⁄4 cup warm water
2 tbsp sugar or maple syrup
1 tbsp apple cider vinegar
2 1⁄2 tsp dry active yeast
1 tsp sea salt
Vegan butter or neutral oil to cook

​METHOD
Combine water, sugar & yeast, let sit until surface is foamy, ~5-10 mins, indicating yeast is active.
In a high speed blender pulse together the tofu, apple cider vinegar & salt till completely creamy, add to the yeast mixture and whisk.
Add the flour, knead everything together 5 mins till dough is smooth and elastic. Sprinkle dough with flour, cover with a damp towel & set in a dark, warm spot until doubled in size, ~1 hr.
Divide the dough into 8 equal portions (or 10 for smaller), roll out each portion on floured surface.
Heat up butter per naan & cook ~1.5 mins per side. Brush with more butter & enjoy!
